Quick and easy dinner with ingredients from fridge and pantry. Don’t add too much salt during the cooking.
Ingredients
3 – 5 packets of Frozen Salmon (from Costco)
3 – 5 cups of Frozen Vegetables (Normandy style from Costco)
3 – 5 cups of hardy vegetables (Baby potatoes, Carrots, cabbage, etc) cut in bite size
Seasonings
1 Tbsp Fish Sauce
1 – 2 Tbsp crushed garlic or 2 tsp Garlic powder.
3 – 4 Tbsp Lemon/Lime juice
1 tsp dried dill
Salt
Ground black pepper
- Defrost the frozen salmon in the individual packet by placing in the water. Replace water 1 – 3 times while preparing other things.
- Cut the hardy vegetables to the bite size. Put them in the Instant Pot (about to cover the bottom in a single layer).
- Add the garlic and fish sauce, ground black pepper, 2 Tbsp lemon juice, and 1/2 tsp dill. Add 1/2 cup water and mix with the vegetables.
- When the salmon is soft and defrosted, remove from the packet and pat dry with paper towel, sprinkle with salt, pepper, and 1/4 tsp dill.
- Place the steamer basket inside the Instant Pot on top of the vegetables. Spray with Pam (or oil) to help with sticking. Place the salmon on the steamer basket.
- Place the plastic steamer plate on the fish to cover. Add the frozen vegetables on the steamer plate. Sprinkle with salt. Add 1 Tbsp lemon juice.
- Close and set @ High Pressure for 5 min with Keep Warm Off.
- Release pressure immediately after the cooking is done.
