Salmon with Vegetables

Quick and easy dinner with ingredients from fridge and pantry. Don’t add too much salt during the cooking.

Ingredients
3 – 5 packets of Frozen Salmon (from Costco)
3 – 5 cups of Frozen Vegetables (Normandy style from Costco)
3 – 5 cups of hardy vegetables (Baby potatoes, Carrots, cabbage, etc) cut in bite size

Seasonings
1 Tbsp Fish Sauce
1 – 2 Tbsp crushed garlic or 2 tsp Garlic powder.
3 – 4 Tbsp Lemon/Lime juice
1 tsp dried dill
Salt
Ground black pepper


  1. Defrost the frozen salmon in the individual packet by placing in the water. Replace water 1 – 3 times while preparing other things.
  2. Cut the hardy vegetables to the bite size. Put them in the Instant Pot (about to cover the bottom in a single layer).
  3. Add the garlic and fish sauce, ground black pepper, 2 Tbsp lemon juice, and 1/2 tsp dill. Add 1/2 cup water and mix with the vegetables.
  4. When the salmon is soft and defrosted, remove from the packet and pat dry with paper towel, sprinkle with salt, pepper, and 1/4 tsp dill.
  5. Place the steamer basket inside the Instant Pot on top of the vegetables. Spray with Pam (or oil) to help with sticking. Place the salmon on the steamer basket.
  6. Place the plastic steamer plate on the fish to cover. Add the frozen vegetables on the steamer plate. Sprinkle with salt. Add 1 Tbsp lemon juice.
  7. Close and set @ High Pressure for 5 min with Keep Warm Off.
  8. Release pressure immediately after the cooking is done.
